La classifica, inaugurata nel 2015 dal magazine francese Le Chef  viene stilata dagli chef. Si tratta, infatti, del risultato di una domanda che viene posta agli chef 2 e 3 stelle Michelin dei Paesi dove è presente la Guida Michelin, ai quali viene chiesto di fornire un elenco di cinque nomi che ritengono rappresentino al meglio i valori della professione, creano una cucina imperdibile, assolutamente da provare.
